Choosing and Using Cooking Oils Properly for Cardiovascular Health
A guide to selecting healthy cooking oils like olive, canola, and avocado, along with cooking principles to protect cardiovascular health based on scientific recommendations.

Fats play an essential role in cell membrane structure, the absorption of fat-soluble vitamins (A, D, E, K), and hormonal regulation. However, selecting the wrong type of oil or using incorrect heating methods can increase risks of inflammation, dyslipidemia, atherosclerosis, and cardiovascular diseases.
According to nutritional guidelines from the World Health Organization (WHO) and the American Heart Association (AHA), a heart-healthy cooking oil must be rich in unsaturated fats (MUFA and PUFA) while minimizing saturated and trans fats.

Extra Virgin Olive Oil is a staple of the Mediterranean diet, containing high levels of oleic acid and polyphenols with powerful antioxidant and anti-inflammatory properties. Research from the Harvard T.H. Chan School of Public Health indicates that replacing saturated fats with olive oil significantly reduces the risk of heart disease. With a smoke point between 190°C and 210°C, it is best suited for salads, dressings, or quick sautéing.

Canola oil is an excellent alternative due to its low saturated fat content (7%) and a balanced ratio of omega-3 and omega-6 fatty acids. With a neutral flavor and a high smoke point (204°C - 240°C), it is ideal for frying, sautéing, or roasting. Additionally, avocado oil is highly regarded for its high MUFA and vitamin E content, providing good thermal stability for high-heat cooking methods.
To optimize nutritional benefits, consumers should follow three principles: understand smoke points to prevent the formation of harmful compounds from overheating; diversify fat sources based on cooking methods; and store oils in dark glass bottles in a cool, dry place away from direct light.
