Purchasing power among Gen Z and Millennials in fresh bakery sections is surging. Brands are now in a race to keep up with the shifting consumer behaviors of these younger generations.

According to Food Business News, Millennials in the US now account for nearly 28% of total unit sales in the fresh bakery category, a 2.5% increase from the previous year. Although Gen Z represents 3.1% of sales, their market share is expanding rapidly with a 35% increase across the total bakery category, 34% in supermarket center-aisle bread, and up to 67% in wraps.

Eric Dell, President and CEO of the American Bakers Association (ABA), stated at the IDDBA 2026 conference held June 7–9 in Orlando: "Consumer priorities are shifting among Gen Z and Millennials. They are looking for products that offer an experience, not just a simple transaction."

Young consumers tend to favor unique flavors inspired by global cuisine. The ABA's Bakery Playbook survey indicates that over half of Millennials and Gen Z (52%) are interested in trendy pretzel flavors like Dubai chocolate or spicy pickles.

There is a notable difference in consumption habits across generations. While Gen Z and Millennials show less interest in traditional bread and packaged snacks, they show a high preference for rolls and brownies.

Digital spaces and social media are the primary drivers of this trend. In Vietnam, supermarket fresh bakery sections have emerged as a hot spot for young people. Trending review videos on TikTok and Instagram demonstrate that the appeal of 'delicious, aesthetic, and affordable' baked goods lies in the shareable experience they provide.

Technology also plays a role, with Millennials and Gen Z increasingly using Artificial Intelligence (AI) to help create shopping lists. Building a strong social media presence and ensuring products appear in AI search results will be key for companies to maintain relevance with young consumers.

Beyond service speed, commitment to sustainability is crucial. The report indicates that 51% of young consumers want to see commitments to sustainable ingredients and carbon footprint reduction on company websites, while 42% prefer to see such information directly on product labels.
