Iodine is an essential micronutrient that the body cannot synthesize on its own, necessitating daily intake through food sources. According to the World Health Organization (WHO), iodine deficiency is recognized as the leading preventable cause of intellectual impairment and brain damage globally. Dr. Nguyen Trong Hung from the National Institute of Nutrition confirms that this micronutrient plays a decisive role in the development of fetuses, infants, and young children, particularly in the formation of the nervous system and the development of the five senses.

The thyroid gland utilizes iodine to synthesize crucial hormones such as thyroxine (T4) and triiodothyronine (T3), which coordinate central nervous system development from the fetal stage. These hormones stimulate brain cell differentiation and support the formation of synaptic connections and myelination, the protective sheath that optimizes neural signal transmission. Iodine deficiency disrupts these mechanisms, potentially causing permanent damage to the brain and a child's information-processing capabilities.

The impact of iodine deficiency varies across developmental stages: during pregnancy, severe deficiency can lead to congenital cretinism, accompanied by auditory and motor disabilities. At mild to moderate levels, children often experience an IQ reduction of 10-15 points compared to those with adequate intake, leading to difficulties in concentration, memory, and logical thinking once they reach school age.

For prevention, Dr. Nguyen Trong Hung recommends daily use of iodized salt as the most cost-effective solution. Pregnant and nursing women require an additional 150 mcg of iodine daily and should diversify their diet with iodine-rich foods such as seafood, seaweed, eggs, and dairy products. Note that iodine is heat-sensitive and evaporates easily; therefore, home cooks should add iodized salt once the food is cooked or just before turning off the heat to maximize nutrient retention.
