Processed meats such as sausages, bacon, and lap cheong have long been staples in many Vietnamese households due to their convenience and savory appeal. However, understanding the safety profile of these foods is essential for long-term health protection.

In 2015, the International Agency for Research on Cancer (IARC) of the World Health Organization (WHO) classified processed meat as Group 1—carcinogenic to humans; while red meat was classified as Group 2A—probably carcinogenic to humans. It is crucial to note that this classification is based on potential risks linked to dosage, frequency, and overall diet, rather than asserting that a small amount will certainly cause disease.

According to the WHO, processed meat includes any meat modified through salting, curing, fermentation, or smoking. A panel of 22 experts from 10 countries, after reviewing over 800 studies, concluded that every 50g of processed meat consumed daily increases the risk of colorectal cancer by approximately 18%. For Vietnamese consumers, the average annual pork consumption has risen significantly from 30kg in 2021 to 39kg in 2025, necessitating better portion control.

The primary risk mechanisms involve nitrites and nitrates used for preservation, which can transform into carcinogenic N-nitroso compounds within the digestive tract. Additionally, heme iron in red meat further promotes this process. Notably, cooking methods such as high-heat frying create heterocyclic amines (HCA), while direct flame grilling produces polycyclic aromatic hydrocarbons (PAH), further increasing the food's hazard profile.

To ensure safety, organizations such as the World Cancer Research Fund (WCRF) and the American Institute for Cancer Research (AICR) recommend minimizing processed meat intake. Consumers should prioritize healthier protein sources such as eggs, fish, chicken, or tofu. Shifting cooking methods to boiling, steaming, or stewing, combined with increasing intake of vegetables and whole grains, will significantly improve dietary quality. Ultimately, maintaining a healthy lifestyle and undergoing regular screenings, especially for those over 45, is key to proactively managing cancer risks.
